This delicious and creamy tofu flatbread sandwich is filled with fresh greens, cucumber, and sweet grapes. Light, healthy, and easy lunch on the go!
Combine the yogurt and mustard in a small bowl and season with salt and pepper. Stir in the tofu and toss until thoroughly coated.
Fold a flatbread or tortilla in half and fill with lettuce, sliced cucumber, grapes and top with some of the tofu mixture. Repeat with second flatbread. Serve and enjoy!
